    • Vinification: 2/3 whole-cluster (see below), indigenous yeast fermentation, minimal punch-downs. Aged for 18 months in barrel (25% new oak). Nicolas strives to use sulfur only prior to bottling. Total sulfur: 20-45 mg/L.

    Of the 0.60 hectares, 0.20 ha were planted in the 1960s and 0.40 ha were planted in 1914. The two parcels are vinified separately with 100% whole-cluster on the older vines, and the younger vines are entirely de-stemmed. The older vines have an absolutely brilliant selection of Pinot Fin that Nicolas has decided to use for his massal selections.
