    • Terroir: Middle of the village below Volnay Champans in the alluvial fan. Rocky soil is poor, shallow (5 to 8 inches deep), and light in color
    • Viticulture: Lutte raisonnée (organic and biodynamic methods)
    • Vinification: 100% de-stemmed, indigenous yeast fermentation, minimal punch-downs. Aged for 18 months in barrel (20% new oak). Nicolas strives to use sulfur only prior to bottling. Total sulfur: 20-45 mg/L.
