  • Terroir: From 5 different vineyards. The older vines are below Cailleret with deep red-brown clay. The younger vines (60% of the cuvée) are in La Bouchère, a cooler site above the village with shallow white soils.
  • Viticulture: Lutte raisonnée (organic and biodynamic methods)
  • Vinification: 100% de-stemmed, indigenous yeast fermentation, minimal punch-downs. Aged for 18 months (10-15% new oak), unfined, light filtration when necessary. Nicolas strives to use sulfur only prior to bottling. Total sulfur: 20-45 mg/L.
