  • Terroir: From the Savigny village-level parcels Planchots and Bourgeots.
  • Viticulture: These parcels are tended and cared for with a special kind of plant therapy since 2016. Fresh and fermented plants are used for mildew prevention, and whey is used for odium prevention. No sulfur in the vineyards, and only minimal doses of copper.
  • Vinification: 100% whole cluster, semi-carbonic fermentation in stainless steel tank, one gentle foot punch-down after a few days, then once fermentation begins one foot punch-down each morning and evening, pressed after 2-3 weeks in tank, aged for 12 months in used barrels, no added SO2.
