- Variety: Pinot Beurot
- Terroir: From Champlains, at a higher altitude, tucked in the northwestern valley of the appellation.
- Viticulture: These parcels are tended and cared for with a special kind of plant therapy since 2016. Fresh and fermented plants are used for mildew prevention, and whey is used for odium prevention. No sulfur in the vineyards, and only minimal doses of copper.
- Vinification: One third of the cuvée is de-stemmed and transferred to the bottom of the tank (stainless steel), the other two thirds remain whole cluster and are added on top, 5-6-day maceration with no punch-downs or pump-overs, pressed for 3 hours, aged for 12 months in tank, no added SO2.
