• Vinification: 90% Chardonnay from 2021 (Champlains and Perrières), 10% Pinot Noir from 2023. Chardonnay - directly pressed, decanted overnight, aged for 12 months in used barrels, no racking or bâtonnage, no added SO2. Pinot Noir - 100% whole cluster, foot punch-downs, pressed after 2-3 weeks in tank, aged for 12 months in used barrels, racked to tank, the lees of all the plots are combined in tank, after 5-6 months the wine from the lees is separated and blended with the Chardonnay before bottling. No added SO2.
